You can record notes or just relish in the stories that Emilio and Bill will share with you. This is a true peek behind the curtain to engage with our experts and discover their love of the craft!

In his role as a third generation owner, Emilio Mignucci serves as the Vice President of Culinary Pioneering. He’s always on the quest for the latest and greatest eats, will travel the globe to find them, and loves telling the stories behind the products and the producers. His expertise and passion for food has helped him to grow the cheese offerings here at Di Bruno Bros. from the 50 varieties it offered in its earlier days to well over 600 cheeses from all over the world–each with their own unique story.

Bill Covaleski’s appreciation of good beer and access to his father’s home-brewing equipment inspired him to explore the hobby of beer making. And after graduating from college in 1985, he decided to share his growing passion with his best friend Ron Barchet, who received a shiny brewing kit that Christmas. Soon the duo developed a good-natured rivalry, leading the two to become accomplished home brewers.  After years of studying, brewing and drinking, Covaleski and Barchet opened Victory Brewing Company on February 15, 1996. They brewed 1,725 barrels of beer in the first year of production. In 2011, Victory produced 82,000 barrels and continues to grow, with a second brewery set to open in 2013.
